The cellar is equipped entirely with stainless steel equipment and has a total capacity of 3,000 hectoliters (300,000 litres).

During vinification, each plot is vinified separately to guarantee traceability of the vine and adapt the best vinification technique to the must according to the origin of the terroir of the plot.
